First sunbeams + Birthday

Long time no post, I know. But I have an excuse. I was busy graduating. From now on, I will have a bit more time though.

So last week we had some summer time here in Belgium for the first time in... Well I guess since last year. And it was boyfriends birthday! We enjoyed the sun in the park with some strawberry tart, magazines, ice tea and each other of course. I loved it and I hope he did as well.

Busy day







I'm leaving for Andorra tomorrow, which means I'm packing, and I hate packing. I always start doubting about what to pack and in the end I take everything with me, just in case, leaving me with a heavy heavy suitcase. We are going to Andorra for one week and next we will be heading for the south of France for another week, which means we're going by car. Sooooo I baked some yummy yummy muffins for on the road. I wanted to eat them today already, but I kept strong. I also packed my cute new old pink shoes with bows (and a lot of ather pairs of shoes as well!). I think I'm ready now so that's why I'm saying goodbye to you guys for two weeks. Till the next post!

Ice popsicles




I totally love maragritas and I discovered that you also can make margarita popsicles...



To make 12 popsicles:

Ingredients
Classic Lime Margarita (you can google the recipe)
12 disposable paper cups or something to poor your margaritas into
12 wooden popsicle sticks or spoons

Instructions
1. Pour the margarita into each cup.
2. Place the cups into a baking dish and put the dish in the freezer.
3. After about 2 hours, start checking the popsicles. Once they're frozen enough to support the wooden stick, insert a stick into each popsicle, pushing 3/4 of the way into the popsicle.
4. Let freeze several more hours or until completely frozen (overnight if you want to be sure)
5. To serve, peel the paper off and carefully remove the bottom.






Kiwi Orange Creamsicles...



To makes  24 popsicles:

Ingredients (for the creamy part)
1 cup heavy cream, divided into two 1/2 cups
1/2 cup whole milk
1/4 cup (50 gr) sugar
pinch of salt
3 egg yolks
1 teaspoon vanilla extract

Instructions
1. Place 1/2 cup of cream in a small bowl with a fine mesh strainer on top.
2. In a small saucepan, combine the milk, the remaining 1/2 cup of cream, sugar, and salt. Bring to just a simmer.
3. Meanwhile, in a separate bowl, whisk together the egg yolks until light.
4. Once the milk is simmering, pour a small but steady stream of the liquid into the egg yolks while stirring constantly to temper. Do this slowly while whisking quickly. Once the milk and egg yolks are combined, return to the saucepan and to the stove.
5. Heat the egg yolk and milk mixture while stirring constantly, making sure to scrape the bottom of the pan so that nothing burns or sticks. Slowly cook the mixture until it thickens enough to coat the back of a wooden spoon. Remove from heat immediately once it thickens.
6. Pour the hot custard through the strainer into the prepared cream and stir to cool. Whisk in the vanilla extract.
7. Chill the mixture thoroughly.

Ingredients (for the kiwi layer)
1 ripe kiwi, peeled
1/4 cup (50 gr) sugar
1/4 cup water
1/2 tspn Grand Marnier

Instructions
1. Combine the peeled kiwi, sugar, water, and Grand Marnier in a food processor bowl and puree until smooth.
2. Chill thoroughly.

Ingredients (for the orange layer)
2 cups orange juice, chilled

To assemble
1. Pour each layer into the molds one at a time, freezing for roughly 30-45 minutes between each layer, depending on how thin you make them.




The second recipe is slightly more difficult but it pays off.

Sun, sea, and my mint green sunglasses









So into vacation right now! I want to swim in the sea, walk around in my bikini all day long and see bright colours everywhere through my mint green sunglasses. For now the only thing I can do is paint my nails in cute colours and pretend that my garden is a beautiful beach. A girl can use her imagination, right? But in three week I will be swimming in the sea in the south of France, so I'm counting down!

Oh Candace




I'm a huge fan of Candace Meyer and her photos. Especially the ones with soft, pinkish light, like these two. Reminds me of summer, that I think is now definately over here in Belgium. I even bought my firts tights, socks and fall/winter clothes this week, and it's only August... But unfortunately that's Belgium and it's dreary weather.

Rome: day 3


The third day we visited the Galleria Borghese. While we waited to get in, we took some pictures to kill the time...







Afterwards we went to Trastevere, where the heat became to much to bear. So we settled down at a nice terrace, drank a lot and ate some olives.




At night we met some friends for diner.

Rome: day 2


Day two in Rome was all about the ancient: we visited Forum Romanum and the Colosseum.



First Forum Romanum, the centre of Rome at the time of the Roman Empire.





At lunchtime we ate a delicious advocado-salad and drank a Cafe Fredo.





In the afternoon we checked out the Colosseum


Just kidding around inside the Colosseum...






Feeling quite Roman today...





And at the end of the day, we made a quick visit to the Vatican and the Spanish Steps.

Rome: Day 1

After the exams, I went to Rome with a good friend, Dana (from Cupid has got a gun), and this is what our first day was like.



After a two-and-a-half hour flight (from Charleroi) we arrived in Rome.
We flew over the Alps...

...and over Rome city. Can you see the Colosseum already?



Once we got settled in our B&B, we started our actual citytrip. Our first stop: the Trevi Fountains.




Then we visited the Pantheon...




...and some little churches near the Pantheon.
I totally fell in love with the ceilings of the San Ignazio church.
Those romans can come and paint my room anytime they want!



And last: we went to the Piazza Navona
